Ernest Hemingway was affectionately known as "Papa" in Cuba. When one day he wandered into La Floridita Bar, Havana, Cuba to use the toilet, he chanced upon a daiquiri created by Constantino Ribalaigua. He is quoted as saying, "that's good but I prefer it without sugar and with double rum" - so the 'Papa Doble' was born.
Papa Doble Singapore name takes after this great author and honours Hemingway by taking inspiration from his novels, history, love for bull and folklore.
Literary giant Hemingway had quite a colourful life. Papa Doble Singapore’s latest menu is inspired by his experiences, and the women he loved. The innovative food and drinks attempt to distil the memories associated with Hemingway’s journey, invoking a sense of nostalgia for a distant past, for romantic and tragic relationships, as well as adventure and travel.
Helmed by Founder and Managing Partner Andrew Yap, Papa Doble Singapore is a passion project restaurant and bar. This intimate speakeasy experience serves top-notch innovative gourmet delights and cocktails paired with an engaging guest experience, while tucked away in the heart of Singapore’s buzzing Keong Saik Road.
